Erişte Soup With Dried Beans

Materials

1 cup haricot beans – pre-soaked and cooked

1 carrot – finely diced

1 small stick of celery – finely diced

1 onion – finely diced

1 cup erişte

1 dessert spoon salt

1 lt water

Garnish:

50 g butter

1 dessert spoon chilli flakes

Preparation of

Add the haricot beans, carrot, celery and onion to 1 litre of salted water.

When the vegetables are cooked, add the erişte (It is a type of pasta obtained by cutting the dough, which is a mixture of flour, oil and salt, into thin sticks or squares with a knife).

Cook for 5–10 minutes. Drizzle with chilli butter before serving.
