Red Lentil Patties

Materials

1 cup red lentils

2 cups fine bulgur

1 tbsp. hot red pepper paste

2 onions – grated

1 bunch spring onions – finely chopped

1 bunch parsley – finely chopped

½ cup vegetable oil

1 tbsp. cumin

1 curly lettuce

Salt

DIRECTIONS

Place the bulgur (cracked wheat) in a deep bowl of boiling water, covering the bulgur by 2–3 cm. Allow the bulgur to absorb the water and expand.

Add the boiled, cooked and drained lentils to the bulgur.

Lightly sauté the grated onions and tomato paste in oil. Turn off the heat. Add chopped spring onions, parsley and cumin. Mix well and add to the bulgur and lentils.

Knead the mixture, allow it to rest for 10 minutes, and form into small cylinder-shaped patties.

Serve with lemon slices on a bed of washed and dried lettuce leaves.
